What I Love About Cooking

One of the things that I like best about cooking is the certainty involved in the process.

You can count on the fact that when you cut vegetables they will look bright, colorful and inviting....

You know that when you saute onions in oil, they will become translucent, sweet and lovely...

You can be sure that ground turkey will crumble gently; that it will appear pink and fresh and, well, meaty...

There is no question that spices will add color and flavor in ways you never thought possible until you tried...

And you can believe that no matter the mess involved, what began as individual, unrelated flavors will combine to make a meal that you are responsible for - start to finish.

Certainty and flexibility. Skill and luck. Creativity and tried-and-true.

Put all these things together, and you get this one thing in return. Joy.
